Hummus Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 tablespoon cumin seeds
  • ½ c tahini, which is the sesame seed paste
  • Garlic cloves (4-5)
  • 3-4 tablespoon fresh lime juice
  • Salt and pepper to taste
  • 1-2 tablespoon chickpeas
  • 4 cups of low-sodium vegetable broth

Procedure

First, sauté the cumin seeds in olive oil in a large pan, until it gives you a nice fragrance and begins to pop. Then after 1 minute add the garlic and onion and cook for 5-7 minutes. After you find the onions get tender add the chickpeas, vegetable broth and tahini and stir for some time.

Adjust tour oven to medium heat and out the soup under a gentle simmer for 5-10 minutes. Make sure you won’t allow it to boil. Now, add the fresh lime juice and pepper serving the hot and delicious hummus soup.

Barley, we all know it’s a healthy cereal but we never loved to have it. But if you get healthy and tasty soup prepared using barley it becomes easier to enjoy the dish.

Warm Yogurt-Barley Soup with Dill

Ingredients

  • 2 tablespoon olive oil
  • 2 cloves of garlic, minced
  • ¾ cup of pearl barley
  • 2 cups of low-sodium vegetable broth
  • 2 cups of low-fat yogurt (the plain one)
  • 1 medium sized yellow onion chopped into medium pieces
  • Salt and pepper to taste
  • ¼ cup of fresh dill, sliced
  • 2 tablespoon of fresh parsley, finely chopped
  • 2 tablespoon of fresh lime juice

Procedure

Saute the onion and garlic in olive oil and it’s better to use a large stockpot. Cook it for 5-7 minutes until it starts getting softened. Next, add the barley with 1 ½ cups of water and cover it allowing to boil. Then put it to simmer for about 25 minutes until it comes out with a tender flavor.

Now, stir in vegetable broth, yogurt, salt and pepper bringing the mixture to simmer only for 5 minutes and don’t allow it to boil. Add the lime juice, dill, and parsley and serve hot.
